Alasitas lies in a lush, steep mountain valley in the La Paz department. The farm is located at the door of the Amazon Jungle and the views that the farm offers is layers of mountains that vanish into infinity merging with the blue colours of the sky.
Freshly picked cherries are loaded into sealed tanks with water and an airlock. This produces anaerobic fermentation in the cherries. *For the ‘lactic’ process, they fermente for 3-5 days, but keeping the temperature very low to prevent off flavours. Their goal is to create a very low pH environment, before going through a more standard washed process afterwards. They’ve also added a rinsing stage before the cherries go into tank to clean them of anything on the surface.
